4-6 Japanese Yams, diced in cubes
2 Cloves Garlic, diced or whole
2 T EVOO or Coconut Oil
1/8 t Rosemary
1/8 t Thyme
Salt + Pepper to taste
Preheat oven to 375 degrees. Place all ingredients in a ceramic or glass bowl and toss together. Then spread ingredients evenly onto a baking sheet and place into oven. Cook for 30 minutes or until tender. Enjoy!
