BLACK BEAN BURGER
1 T EVOO
1 t Coconut Oil
1 Onion, diced
2 Carrots, shredded
1 Clove Garlic
1 t Cumin
1/2 t Coriander
1/2 t Chili Powder
2 cups Black Beans, soaked, strained and cooked OR canned
1 cup Garbanzo beans, soaked, strained and cooked OR canned
1 T Coconut Aminos
1/2 cup Gluten Free Rolled Oats, ground
2 T Flax Seed, ground
Cook it up!
Place EVOO, Onion, Garlic, Salt + Pepper in saute pan and cook until onions are light golden. Add Carrots, Cumin, Coriander, and Chili Powder. Stir and set to low, covered.
Place Black Beans and Garbanzo Beans into a glass or ceramic bowl and mash. Add Coconut Aminos, Rolled Oats and Flax Seed mix. Place remainder of ingredients in the saute pan into bowl and mix with your hands. Create patty sized burgers and place onto a sheet pan. Once complete, cover with tin foil and place in freezer for 30 minutes.
Heat saute pan with Coconut Oil to medium. Place frozen patty in the middle and cover. Flip the burger a few times until browned. Place burger onto lettuce wraps or whole wheat buns with all your "fixings" and enjoy!
